Carrot cake cupcakes

Easy to make carrot cupcakes..

120g self raising flour
220g of oil (I used sunflower and olive oil)
25g grated carrots
130g brown sugar or caster sugar
2 eggs
Teaspoon of cinnamon

Top with vanilla or cinnamon butter cream and chopped nuts (optional)

Mix it altogether and bake for 20-30minutes.. And enjoy!!

  1. I am well impressed with these cupcakes. Firstly they look great, secondly they taste really great. I’m not a carrot-cake person but have to say I thoroughly enjoyed these!! Well done, excellent recipe.

  2. I love these cakes. After trying to resist all morning temptation got the better of me and I’m so glad it did. Perfect texture and look and taste great. I might even try and make them myself at the weekend x
